Cheese Omelette with Shredded Chilli

 1 Spring onion, finely chopped
 2 Large eggs
 1 tbsp Olive oil
 1 tsp Chopped fresh red chilli
 25 g Cheddar cheese, grated
 Himalaya salt and pepper

Mix the eggs with cheese and some salth and pepper in a bowl, mix well

Heat a skillet pan with olive oil. Add in onion and chili. Stir fried till fragance

Pour in egg mixture and tilt the pan to have it move across the pan

When one side is cooked, fold the omelette

Serve on plate while hot
